Ingredients
Salad
  • 15.5 oz canned black beans rinsed and drained
  • 1 large orange, red or yellow bell pepper
  • 1 pint cherry tomatoes
  • 2 cups corn (fresh or frozen thawed)
  • 5 medium green onions
  • 1 large jalapeño seeded and small diced
  • optional avocado

Instructions
  1. Puree all the dressing ingredients in a food processor/blender until smooth. Taste and adjust seasonings as necessary.
  2. Finely chop romaine, bell pepper, tomatoes, jalapeño and green onions. Place all the ingredients in a large bowl and stir to combine. Toss the salad with the dressing.
